Baked Cherry Berry Oatmeal Recipe

I don’t know about you, but I can get tired of eating the same old oatmeal each and every morning for breakfast. Not only am I looking for some variety in taste, but I also love the idea of make ahead recipes. This saves time and makes 4-6 portions you can eat throughout the week for breakfast.

Baked oatmeal is as simple as mixing up a few ingredients, pouring them in a baking dish, and throwing in the oven to bake. Quick and easy prep! You can bake and serve this breakfast dish in the morning, or prepare the night before and allow to set overnight.

This is a vegan recipe, using chia seed mixed with water as a binding ingredient. You can make this baked cherry oatmeal with steel cut oats and your choice of milk substitute: almond, coconut, or oat milk.

Although you can enjoy this cold, it’s delicious warmed up with additional fresh or dried fruit, nuts, and milk substitute.

Vegan Baked Oatmeal Recipe

Cherry Berry Oatmeal Recipe

Serves 4-6

1 cup steel cut oats

3 cups milk substitute: almond milk, coconut milk or oat milk

1 TBS chia seeds + 3 TBS water

1 cup frozen cherries, pitted

1/2 cup frozen or fresh blueberries

1/2 tsp vanilla

1/2 tsp cinnamon 

1/4 tsp sea salt

Coconut oil or spray

  1. Preheat oven to 350 degrees. 

  2. Coat 8x8 baking dish with coconut oil.

  3. Combine chia seeds and water and let stand for 10-15 minutes. 

  4. Mix all ingredients and place in baking dish.

  5. Bake for 50-60 minutes.

  6. Allow to cool 15-30 minutes.

Serve immediately for softer texture, or refrigerate overnight to set. Serve warm or cold with fresh fruit and almonds or walnuts.
